I am a vegetarian and the last time I was in tourist hotel bungoma I really enjoyed the Spinach Enchiladas a Mexican food that is all about spinach and cheese. It was my first time to have a taste of it and I must acknowledge my fiancée Akedi for having ordered it. I managed to get the recipe at tourist hotel bungoma on how to prepare it while am at home and indeed I must say it was delicious. I however managed to come up with the ingredients and steps on how to prepare a Spinach Enchiladas.

  • 1 ½ tablespoon butter
  • ½ cup sliced green onions
  • 2 minced cloves garlic
  • 1 bunch of chopped spinach
  • ½ cup of sour cream
  • 1 cup of ricotta cheese
  • 1 can of enchilada sauce
  • Tortillas

Procedure

Cook the spinach for at least 5 minutes. After that reduce the heat and mix with ricotta cheese and sour cream. In the meantime warm the tortillas until they become flexible. Spoon some spinach mixture onto the centre of each tortilla and your good to go. It’s as easy as that

I recently contacted the waiter Mr. Wafula who served me recently at Tourist hotel bungoma to confirm my recipe and he invited me for lessons on newly introduced halal cooking for the Muslim community. I am so eager to learn and surprise my Muslim friends with one of their dishes like Biryani – Rice based food, with spices, vegetables and meat. A nice dish is for sure the one that is prepared on your own and am willing to take my cooking to another level.
